Etch Restaurant - Jess Lambert

HEAD COOK: Jessica Lambert

COMPETITION: World Chef Championship

Native Nashvillian Jess Lambert has spent more than a decade working in hospitality. A multi-talented culinarian, Lambert was a bar manager and pastry chef at top restaurants before quickly working her way up from prep cook to sous chef under chef Deb Paquette at etch restaurant in Nashville, TN. When opening etc. in Green Hills, Paquette enlisted Lambert as chef de cuisine at the intimate, globally-driven restaurant. After a year and a half at etc., Lambert transitioned back to Etch, where she works alongside chef/owner Paquette and executive pastry chef Megan Williams at one of the city’s hottest restaurants. In 2024, Jess opened the second location of etch in Franklin, TN as the executive chef. In this current role, Jess oversees operations and menu development at all three restaurants. Her creative prowess in the kitchen has earned her praise in numerous publications, a spot at the top of the Williamson Scene’s “ Best New Restaurants,”, and secured her the coveted title at the Nashville Scene Iron Fork competition.
